At Subaida they produce a delicious handmade Mahón-Menorca cheese (Protected Designation of Origin) that you can buy without intermediaries at the farm itself from Monday to Saturday.
In addition to producing artisan cheese and sausages, in Subaida you can do different activities and enjoy their products on your own or on guided tours.

1. Guided Tour + Snack on the Terrace – 22€/person

- Persons: Minimum 2, Maximum 20 (Adults and children)
- Private visit supplement: 80€.
- Schedule: Monday to Saturday
- Duration: 1h
- Language: Spanish
The guided tour of the facilities lasts 1 hour and allows you to see the animals of the Subaida farm and see how Subaida’s Mahón-Menorca cheese is handmade.
If you feel like it, you can give a calf a bottle 🙂 After the guided tour of Subaida, you can enjoy a snack of Subaida products on the terrace.
Children can have a sobrasada sandwich.
The snack for adults lasts as long as you want and includes:
- Board of 3 raw cow’s milk cheeses (3, 6 and 12 months of curing: semi-cured, cured and aged) and sausages (sobrasada and carn i xulla)
- Pasteurized cheeses are available, if you prefer.
- Bread with tomato
- Cheese croquettes with sobrasada and camot
- Hot toasts (sobrasada and honey and camot with soft cheese).
After the visit, if you liked what you tasted, I recommend that you stop by the Subaida store and buy whatever you feel like.
2. Guided Tour + Tasting and Wine Pairing (Adults only) – 25€/person

- Persons: Minimum 2, Maximum 14 (Adults only)
- Schedule: Monday to Saturday
- Duration: 1h 30min
- Language: Spanish

The tasting and pairing lasts 30 minutes and includes:

3. Family Farmers for a Day and Master Cheesemaker Experience – 50€/person (children from 3 to 14 – 25€)

- Persons: Minimum 2, Maximum 5 (Adults 50€ and children 3 to 14 years old 25€)
- Private visit supplement: 80€.
- Schedule: Monday to Saturday
- Duration: 4h

How is Subaida cheese made?
- Milking: The cow is milked and the milk is stored in special vats at room temperature.
- Curdling: it is added by adding rennet and raising the temperature of the milk to 32 or 33 degrees.
The milk is stirred during the process. - Fogassear: The master cheesemaker uses fogassers (pieces of gauze cloth) to wrap the cheese paste and label the cheeses.
The pieces are taken to the press to expel the whey for 2 to 8 hours. - Brine: The cheeses are uncovered by removing the fogasser, and placed in brine for 1 to 2 days.
The mixture of water and salt is the secret recipe of Subaida. - Ripening: The cheese is left in ripening cellars to rest.
The resting time will change according to the variety of cheese(semi-cured: 3 months, cured: 6 months and aged: 12 months).
